The Morimoto Omakase

I was recently in Manhattan and decided to eat at Morimoto's. Masaharu Morimoto-san is a world-renowned Japanese chef from Hiroshima. What I find interesting in Japanese food is how widely it differs based on the geographical region. I think the simplest way to experience the differences in Japanese cooking is to try Omakase (chef's selection) sushi. In Portland, this can be done by visiting restaurants like Benkay (where Chef Ando-san is from Osaka), Miyake (Chef Masa-san from Hokkaido), and one of the other Sushi Restaurants in the Old-Port.
Additional choices include: Fuji's Chef Ken-san (not sure from where just yet); Sapporo's Chef Ratha (Cambodia), albeit questionable because the staff would not answer over the phone; Yosaku's Chef Sato Takahio (Hokkaido), etc...
I am not going to give away the Omakase at any of the local restaurants, that's for you to try yourself. However, here is a sampling from the Mormimoto Omakase on New York. I was enjoying the experience without a notebook, so please be aware that my descriptions are not from their menu.
